Ingredients
- ¼ cup mayonnaise
- ¼ cup avocado oil (plus more for the griddle)
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce or gluten-free tamari
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- ½ teaspoon fresh ground black pepper
- ¼ teaspoon cayenne pepper
- 2 pounds boneless skinless chicken breast
Instructions
Grab a small bowl and whisk together the mayo, avocado oil, Dijon, soy sauce, thyme, salt, pepper, and cayenne. It should look creamy and dreamy.
Toss your chicken in the marinade, then let it chill in the fridge for at least 4 hours—overnight is even better. (This is when all the magic happens. The mayo and oil tenderize, while the mustard and soy sauce bring the zing.)
Fire up your Blackstone flat top griddle to medium heat, around 350°F. Once it’s hot, drizzle or spray on some oil.
Place the marinated chicken on the griddle. Let it cook undisturbed for 7 minutes, then flip. Cook for another 7–10 minutes, or until the internal temp hits 160°F. Use a meat thermometer—no guessing games here.
Transfer to a plate, tent with foil, and let it rest for 5–10 minutes. This step is key to locking in all those juices.
