  • 7 large eggs
  • 1 cup cottage cheese
  • 1 cup Colby Jack cheese, shredded
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Cooking oil spray

Instructions

  • Preheat oven to 325℉.
  • In a medium-sized bowl, crack and whisk the eggs.
  • Add bacon bits, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.
  • Spray a 12-cup muffin pan with cooking oil.
  • Distribute the egg mixture evenly among the muffin cups.
  • Place a pan of water on the lower oven rack, and place the muffin pan on the upper rack.
  • Bake for 23–25 minutes, until a toothpick inserted into the center comes out clean.
