- ¾ cup cooked bacon bits
- 7 large eggs
- 1 cup cottage cheese
- 1 cup Colby Jack cheese, shredded
- ¼ tsp salt
- ¼ tsp black pepper
- Cooking oil spray
Instructions
- Preheat oven to 325℉.
- In a medium-sized bowl, crack and whisk the eggs.
- Add bacon bits, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.
- Spray a 12-cup muffin pan with cooking oil.
- Distribute the egg mixture evenly among the muffin cups.
- Place a pan of water on the lower oven rack, and place the muffin pan on the upper rack.
- Bake for 23–25 minutes, until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes, then remove egg bites from the pan before they cool completely.
